A comforting dish with creamy Velveeta sauce, tender rotini pasta, and juicy chicken, perfect for busy weeknights.

  • 8 oz rotini pasta
  • 1 lb chicken breast, diced
  • 8 oz Velveeta cheese, cubed
  • 1 cup chicken broth
  • 4 oz cream cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Bring a pot of salted water to a rolling boil. Add the rotini pasta and cook according to package instructions, usually about 8-10 minutes, until al dente. Drain and set aside.
  2. In a large skillet, over medium heat, add a little olive oil. Season diced chicken with salt, pepper, garlic powder, and onion powder. Cook for about 6-8 minutes until browned and no longer pink in the center.
  3. Lower the heat and add chicken broth to the skillet. Stir in Velveeta and cream cheese until melted, creating a creamy sauce.
  4. Add the cooked rotini to the skillet and toss well to coat in the sauce.
  5. Taste and adjust seasonings as needed. If the sauce is too thick, add a splash more broth.
  6. Serve warm, garnished with freshly chopped parsley if desired.

Notes

For variations, consider using turkey instead of chicken or add vegetables like broccoli for extra nutrition. Leftovers can be stored for up to 3 days.
