Creamy Garlic Chicken Pasta

A quick and satisfying dish combining tender chicken with a rich, garlicky cream sauce over perfectly cooked pasta.

  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine or your preferred pasta
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: In a large pot, bring salted water to a boil. Add pasta and cook according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.
  2. Prepare the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper. Add chicken to skillet and cook for about 6-7 minutes on each side, until golden brown and cooked through.
  3. Sauté the Garlic: Remove chicken from skillet and let it rest. In the same skillet, lower heat and add minced garlic. Sauté for 1-2 minutes or until fragrant, being careful not to burn.
  4. Make the Sauce: Pour in chicken broth and let it simmer for about 3 minutes. Stir in heavy cream and bring to a gentle simmer. Cook for another 3-5 minutes until it thickens slightly.
  5. Combine the Ingredients: Slice chicken into strips and return it to the skillet. Add drained pasta and Parmesan cheese. Toss gently to coat. If sauce is too thick, add some reserved pasta water.
  6. Season and Serve: Adjust seasoning with salt and pepper if necessary. Garnish with freshly chopped parsley before serving.

Notes

For a lighter version, consider using half-and-half instead of heavy cream. This dish can also be made with shrimp or mushrooms for a different protein option.
