Delightful muffin squares with tangy cranberries and zesty orange, perfect for breakfast or brunch.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 large egg
  • 1 cup milk
  • ½ cup vegetable oil
  • Zest of 1 orange
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 375°F (190°C) and line a square baking pan (9×9 inches) with parchment paper.
  2. In a large bowl, sift together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the egg, milk, vegetable oil, and orange zest.
  4. Gradually add the wet ingredients to the dry ingredients and stir gently until just combined.
  5. Fold in the cranberries carefully.
  6. Pour the batter into the prepared baking pan and smooth the top with a spatula.
  7. Bake for 25–30 minutes or until golden and a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before cutting into squares.
