  • 2 pounds of chicken thighs or breasts
  • 1 cup of fresh or frozen cranberries
  • Zest and juice of 1 large orange
  • 1/2 cup of chicken broth
  • 1/4 cup of honey or maple syrup
  • 2 cloves of garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prep Your Ingredients: Wash the cranberries and zest the orange. Juice the orange.
  2. Mix the Sauce: In a bowl, combine the cranberries, orange zest and juice, honey or maple syrup, garlic, chicken broth, salt, and pepper. Stir to combine.
  3. Sear the Chicken (optional): Heat a skillet over medium heat. Lightly season chicken with salt and pepper, sear for 3-4 minutes on each side until golden.
  4. Cook the Chicken: Place the chicken in a slow cooker or air fryer. Pour the cranberry-orange sauce over, ensuring each piece is coated.
  5. Slow Cook or Air Fry: For Slow Cooker, cook on low for 6-7 hours or high for 3-4 hours. For Air Fryer, set to 360°F (180°C) and cook for 25-30 minutes, flipping halfway.
  6. Check for Doneness: Ensure chicken reaches 165°F (75°C).
  7. Serve and Enjoy: Remove chicken, drizzle additional sauce, and serve over rice or alongside roasted vegetables.

Notes

Can be prepared ahead of time and marinated overnight for enhanced flavor. Store leftovers in an airtight container for up to three days.
