Ingredients

  • 8 large eggs
  • 1 ½ cups milk
  • 4 cups diced bread (cubed)
  • 1 cup cooked bacon or sausage
  • 2 cups shredded cheese (cheddar or preferred choice)
  • 1 cup diced bell peppers and onions
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Lightly grease a 9×13-inch baking dish.
  3. Cook the bacon or sausage in a skillet until crispy, drain, and chop.
  4. In a large bowl, whisk together eggs, milk, salt, and pepper until frothy.
  5. Layer half of the cubed bread, half of the meat, veggies, and cheese in the baking dish; repeat.
  6. Pour the egg mixture over the casserole, pressing down lightly.
  7. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 15-20 minutes until golden brown.
