A delightful blend of flavors, this Eggnog Poke Cake features a moist cake soaked in eggnog with a creamy topping, perfect for the holiday season.

Ingredients

  • 1 box of vanilla cake mix
  • 3 large eggs
  • 1 cup of eggnog
  • 1/2 cup of vegetable oil
  • 1 cup of eggnog (for soaking)
  • 1/4 teaspoon of ground nutmeg
  • 1 container of whipped topping
  • 1/2 teaspoon of ground cinnamon
  • Crushed nutmeg (for garnishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix the cake mix, eggs, eggnog, and vegetable oil with an electric mixer on medium speed for about 2 minutes.
  3. Pour the batter into the prepared baking dish and bake for 25-30 minutes. A toothpick inserted in the center should come out clean.
  4. Let the cake cool for 10 minutes and then poke holes all over the top using a skewer or wooden spoon handle.
  5. Mix 1 cup of eggnog with 1/4 teaspoon of nutmeg and pour over the poked cake. Let cool completely.
  6. Spread the whipped topping over the cooled cake and sprinkle with ground cinnamon and crushed nutmeg.
  7. Chill in the refrigerator for at least 1 hour before serving.

Notes

This cake can be made in advance and is best served fresh within the first 24 hours.
