  • 1 cup sliced mushrooms
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons cornstarch (optional)
  • Salt and pepper to taste

Instructions

  1. In a large skillet or pot, heat 1-2 tablespoons of cooking oil over medium-high heat. Add the beef stew meat in batches and sear for about 4-5 minutes per side until browned.
  2. Add chopped onion and minced garlic to the pot and sauté until the onion becomes translucent, about 3 minutes.
  3. Add sliced mushrooms and cook until they begin to soften, about 2-3 minutes.
  4. Stir in beef broth and Worcestershire sauce, bringing the mixture to a gentle simmer.
  5. Reduce heat to low, cover, and simmer for about 1.5 hours, stirring occasionally. Optionally, thicken with cornstarch slurry for an additional 5 minutes.
  6. Adjust seasoning with salt and pepper, then serve over mashed potatoes, rice, or egg noodles, garnished with parsley.

Notes

This dish can be made ahead of time and the flavors will intensify. It can be stored in the fridge for up to 3-4 days or frozen for up to 3 months.
