A simple and comforting dish featuring tender chicken breasts seared and finished in a rich garlic butter sauce.

Ingredients

Scale
  • 1/2 tsp black pepper, freshly ground
  • 1 tsp salt
  • 1/4 cup all purpose flour
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 2 chicken breasts (9 oz each), boneless and skinless
  • 1/2 cup chicken stock
  • 2 garlic cloves, minced
  • 5 tbsp unsalted butter (room temperature)
  • 1 tbsp chopped fresh parsley
  • 1 lemon, quartered

Instructions

  1. Pat the chicken breasts dry with paper towels. In a shallow dish, combine the flour, salt, black pepper, and garlic powder. Dredge each chicken breast in the mixture, shaking off any excess flour.
  2. Heat a large skillet over medium-high heat and add the olive oil. Once hot, add the chicken breasts. Sear for 4 to 5 minutes on the first side until golden brown.
  3. Flip the chicken and sear the second side for 4 to 5 minutes until golden. Transfer to a plate and set aside.
  4. Lower the heat to medium-low and add the minced garlic to the skillet. Cook for about 30 seconds until fragrant.
  5. Pour in the chicken stock, scraping up any browned bits from the bottom of the skillet.
  6. Stir in the butter one tablespoon at a time, allowing each to melt before adding the next. Return the chicken to the skillet and spoon the sauce over each breast.
  7. Cover the skillet and simmer on low for 5 to 8 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. Transfer the chicken to plates, spoon sauce over the top, garnish with parsley, and serve with lemon wedges.

Notes

Patting the chicken dry is key to a good sear. Store leftovers in an airtight container in the refrigerator for up to 3 days.
