Deliciously moist banana bread with a sweet cinnamon-sugar swirl, perfect for breakfast or a snack.

  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 4 tablespoons unsalted butter, softened
  • 2 large eggs
  • 1 and 1/2 cups mashed bananas
  • 1/3 cup plain Greek yogurt
  • 1 teaspoon pure vanilla extract
  • 1/4 cup granulated sugar (for cinnamon sugar swirl)
  • 1 and 1/2 teaspoons ground cinnamon (for cinnamon sugar swirl)
  • 1/2 cup confectioners’ sugar (for icing)
  • 1 tablespoon heavy cream or milk (for icing)
  • 1/4 teaspoon pure vanilla extract (for icing)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the dry ingredients: In a medium bowl, whisk together flour, baking soda, ground cinnamon, and salt. Set aside.
  3. Cream the butter and sugar: In a large bowl, beat the softened butter and sugar until smooth and fluffy.
  4. Incorporate the eggs: Add the eggs one at a time to the mixture, mixing well after each addition.
  5. Mix the banana mixture: In another bowl, combine mashed bananas, Greek yogurt, and vanilla extract.
  6. Combine wet and dry ingredients: Add the banana mixture to the butter-sugar mix, then gently fold in the dry ingredients.
  7. Add the first batter layer: Spoon half of the batter into the prepared loaf pan.
  8. Create the cinnamon sugar swirl: Mix 1/4 cup granulated sugar with 1 and 1/2 teaspoons of ground cinnamon, then sprinkle over the first batter layer.
  9. Layer the remaining batter: Spoon the remaining batter over the cinnamon layer.
  10. Bake: Bake for 60-70 minutes, or until a toothpick comes out clean.
  11. Cool and ice: Let the bread cool for 10 minutes, then prepare the icing and drizzle it over the cooled bread.

Notes

For best results, use very ripe bananas and avoid overmixing to maintain moisture.
