  • 6 cups pecan halves, unsalted
  • 2 egg whites, at room temperature
  • 2 tablespoons water
  • 2 cups granulated sugar
  • 2 teaspoons ground cinnamon
  • 2 teaspoons salt

Instructions

  1. Preheat the oven to 300°F (149°C). Line 2 baking sheets with parchment paper or silicone mats and grease lightly.
  2. Beat the egg whites and water on medium-high speed until foamy and fluffy, about 2 minutes.
  3. Add the granulated sugar, ground cinnamon, and salt to the egg whites, and gently fold until combined.
  4. Stir in the pecans until they are completely coated.
  5. Spread the coated pecans in a single layer on the prepared baking sheets.
  6. Bake for 45 minutes, stirring every 15 minutes to ensure even baking.
  7. Allow the pecans to cool completely on the baking sheets before storing.

Notes

For even coating, fold the pecans gently during preparation. Store in an airtight container at room temperature for up to 2 weeks.
