Warm and tender cookies filled with ginger spice and topped with a melty chocolate Kiss.

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 and 1/4 teaspoons ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup packed light or dark brown sugar
  • 6 tablespoons unsulphured or dark molasses
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup granulated sugar or coarse sugar for rolling
  • 30 Hershey’s Kisses or Hugs, unwrapped

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Whisk together the flour, baking soda, ginger, cinnamon, cloves, allspice, nutmeg, and salt until combined.
  3. Beat the softened butter and brown sugar together until creamy.
  4. Add the molasses, egg, and vanilla extract, mixing until incorporated.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a thick dough forms.
  6. Scoop out the dough, roll into balls, and then roll in sugar.
  7. Bake for 12 minutes or until edges are set and centers are slightly soft.
  8. Press a chocolate kiss in the center of each cookie and allow them to cool.

Notes

Use room temperature butter for easy creaming and a smooth dough. Roll cookies evenly sized for uniform baking.
