Thick, chewy chocolate chip cookie bars with crispy edges and tender interiors, perfect for bake sales or casual desserts.

Ingredients

  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, melted and slightly cooled
  • 1 cup packed light brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: sprinkle of flaky sea salt

Instructions

  1. Preheat the oven to 350°F (177°C). Line a 9-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, cornstarch, and salt until evenly combined.
  3. In a medium bowl, whisk the melted butter, brown sugar, and granulated sugar until no lumps remain.
  4. Add the egg, extra egg yolk, and vanilla extract to the sugar mixture and whisk until well combined.
  5. Combine the wet ingredients with the dry ingredients, mixing until just incorporated.
  6. Gently fold in the chocolate chips until evenly distributed.
  7. Transfer the dough to the prepared baking pan and press it into an even layer.
  8. If desired, sprinkle with flaky sea salt and press some additional chocolate chips on top.
  9. Bake for 30 to 34 minutes, or until the top is lightly browned.
  10. Allow to cool in the pan for at least an hour before lifting out and cutting into squares.

Notes

Store cooled bars in an airtight container for up to 3 days. For freezing, wrap tightly and store for up to 3 months.
