A decadent Chocolate Cherry Cake that combines rich chocolate flavors with the tangy notes of cherries, perfect for any occasion.

Ingredients

  • 1 (15.25 oz) chocolate cake mix
  • 3 large eggs, room temperature
  • ½ cup (120 g) sour cream, room temperature
  • 1 teaspoon almond extract
  • 1 (21 oz) can cherry pie filling
  • 1 cup mini chocolate chips (optional)
  • 3 oz chocolate chips
  • 3 tablespoons unsalted butter
  • 2 cups (180 – 240 g) powdered sugar
  • 1 teaspoon vanilla extract
  • 34 tablespoons (45 – 60 ml) warm milk

Instructions

  1. Preheat your oven to 350°F (177°C). Lightly grease and line a 9 x 13 inch cake pan with parchment paper.
  2. In a large mixing bowl, whisk together the eggs, sour cream, almond extract, and chocolate cake mix until well combined.
  3. Gently stir in the cherry pie filling and mini chocolate chips, reserving some cherry filling for later use if desired.
  4. Pour the batter into the prepared cake pan and bake for 30-35 minutes, checking for doneness with a toothpick.
  5. Once baked, let the cake cool in the pan for 1 hour, then remove it from the pan.
  6. To prepare the icing, melt the chocolate chips and butter, then stir in the powdered sugar, vanilla extract, and warm milk until the desired consistency is reached.
  7. After the cake has cooled completely, spread the icing over the top and garnish with additional cherries if desired. Slice and enjoy!

Notes

For an extra rich flavor, consider using a dark chocolate cake mix and doubling the chocolate chips.
