A refreshing and wholesome salad featuring chickpeas, creamy avocado, and tangy feta cheese, perfect for summer days.

Ingredients

  • 1 can (15 oz) chickpeas, rinsed and drained
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • 1 small red onion, finely diced
  • 1 tablespoon fresh parsley, chopped
  • Juice of 1 lime
  • Salt and pepper, to taste

Instructions

  1. Rinse the chickpeas thoroughly and drain them.
  2. Slice the cherry tomatoes in half and finely dice the red onion.
  3. Cube the avocados and add them to a mixing bowl with the prepared vegetables.
  4. Add the drained chickpeas and crumbled feta cheese, mixing gently.
  5. Drizzle lime juice, seasoning with salt and pepper.
  6. Fold the ingredients together carefully to maintain avocado texture.
  7. Garnish with chopped parsley and serve immediately or refrigerate for 20-30 minutes.

Notes

To prevent the avocados from browning, keep them separate until serving.
