  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, beat the softened butter and 1 ½ cups of sugar together until light and fluffy (2-3 minutes).
  3. Mix in the egg and vanilla extract until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing until combined.
  5. Form the dough into 1-inch balls and roll them in granulated sugar before placing on a baking sheet lined with parchment paper.
  6. Bake for 9-11 minutes until lightly golden at the edges but still soft in the middle.
  7. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

To achieve a thicker cookie, consider chilling the dough before baking. Store in an airtight container to keep fresh for up to a week.
