Delightful, crispy rolls filled with a savory mixture of fresh vegetables and melted cheese, perfect for any occasion.

Ingredients

  • 1 cup of chopped spinach
  • 1 cup of mixed bell peppers (red, green, yellow)
  • 1 cup of shredded cheese (mozzarella or cheddar)
  • 1 package of puff pastry or spring roll wrappers
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a pan over medium heat, add olive oil and sauté the chopped spinach and bell peppers until soft, about 3-5 minutes.
  3. In a mixing bowl, combine the sautéed vegetables with shredded cheese, salt, and pepper.
  4. Take a piece of puff pastry or spring roll wrapper, spoon a tablespoon of the vegetable-cheese mixture onto one end, roll tightly, tucking in the sides.
  5. Place the filled rolls on a baking sheet lined with parchment paper. Bake for about 25 minutes or until golden brown and puffed.
  6. Let the rolls cool for a few minutes before serving.

Notes

For a healthier version, try using an air fryer set to 375°F (190°C) for about 15 minutes.
