Delightful Cannoli Cookies that blend the creamy, sweet flavors of traditional cannoli filling with the crunch of baked treats.

Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • Zest of 1 orange
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 cup chocolate chips
  • 1/4 cup chopped pistachios (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ricotta, mascarpone, powdered sugar, and orange zest. Blend until smooth and fluffy.
  3. In another bowl, whisk together flour and baking powder.
  4. Gradually incorporate the dry ingredients into the cheese mixture.
  5. Fold in chocolate chips and pistachios (if using).
  6. Scoop tablespoon-sized amounts of dough onto a lined baking sheet, spaced about 2 inches apart.
  7. Bake for 12-15 minutes or until edges are lightly golden. Let cool before transferring to a wire rack.

Notes

For a richer flavor, you can use only mascarpone instead of ricotta. Store in an airtight container for up to 5 days.
