Cajun Chicken Mac and Cheese

A comforting dish that combines creamy mac and cheese with the bold flavors of Cajun spices and tender chicken.

  • 2 cups elbow macaroni
  • 1 lb chicken breast
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to boil and cook the elbow macaroni until al dente, about 8-10 minutes. Drain and set aside.
  3. Dice the chicken and season with Cajun seasoning. In a skillet, heat oil and sauté the chicken until browned and cooked through, about 5-7 minutes. Set aside.
  4. In the same skillet, melt butter, add flour, and stir for 1-2 minutes to create a roux. Gradually whisk in milk and cook until thickened, about 3-5 minutes. Stir in half the cheese until melted.
  5. In a large bowl, combine the cooked macaroni, chicken, cheese sauce, and remaining Cajun seasoning. Mix well.
  6. Pour into a greased 9×13 inch baking dish. Top with remaining cheese and breadcrumbs.
  7. Bake for 20-25 minutes until golden brown and bubbly. Let sit for a few minutes before serving.

Notes

This dish is flexible; feel free to use different cheeses or add sautéed vegetables for extra flavor.
