  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. Cream the butter, brown sugar, and granulated sugar together until creamy and fluffy.
  4. Add the egg and vanilla extract, mixing until fully incorporated.
  5. In another bowl, whisk together the flour, baking soda, cinnamon, and salt; gradually add this to the wet ingredients until just combined.
  6. Portion out cookie dough onto the prepared baking sheet, leaving 2 inches between each cookie.
  7. Bake for 10-12 minutes, or until edges are golden; cool on baking sheet before transferring to a wire rack.
