Delightful and easy-to-make Brown Sugar Pop Tart Cookies that are soft, buttery, and filled with rich flavors reminiscent of classic pop tarts.

  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)
  • 1 tsp vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until well-mixed.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt. Gradually add this mixture to the wet ingredients, stirring until combined.
  5. Turn the dough onto a floured surface and roll it out to about ¼ inch thickness. Use cookie cutters to create shapes, and place them on a lined baking sheet.
  6. Bake for 15-20 minutes, or until lightly golden.
  7. Let the cookies cool completely before glazing. Whisk together the powdered sugar, milk, and vanilla extract until smooth and drizzle over the cooled cookies.

Notes
