Delightful homemade blueberry pie bars with a sweet, tart filling and a buttery crumbly crust, perfect for summer baking.

  • 1 and 1/2 cups all-purpose flour
  • 1 cup old-fashioned whole rolled oats
  • 1/2 cup packed light or dark brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 10 tablespoons unsalted butter, melted
  • 4 and 1/2 cups blueberries
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 teaspoons lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9-inch square pan with parchment paper.
  2. Whisk together the flour, rolled oats, brown sugar, baking powder, lemon zest, cinnamon, and salt until combined.
  3. Pour the melted butter into the dry ingredients and mix until crumbly.
  4. Press about 2/3 of the crumbly mixture into the bottom of the prepared pan and bake for 10 minutes.
  5. Combine blueberries, granulated sugar, cornstarch, and lemon juice in a medium saucepan over medium heat until thickened, about 5-7 minutes.
  6. Pour the blueberry filling over the par-baked crust.
  7. Sprinkle the remaining crumbly mixture on top of the blueberry filling.
  8. Return the pan to the oven and bake for an additional 45-55 minutes until set and golden.
  9. Allow to cool completely before cutting into squares.

Notes

For a crunchier topping, add chopped nuts. Adjust sugar to taste based on the sweetness of blueberries. Store in an airtight container for up to 3 days or refrigerate for up to a week.
