Delightful Blueberry Crumble Bars with a perfect blend of tart and sweet flavors, all nestled within a buttery, crumbly topping.

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Combine the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl.
  3. Add the egg yolk and melted unsalted butter to the dry ingredients, mixing gently until crumbly.
  4. Reserve 1 cup of the crumble mixture for topping. Press the rest into the bottom of the prepared pan.
  5. Mix the frozen blueberries with white sugar and lemon juice in a separate bowl.
  6. Spoon the blueberry mixture over the pressed base and spread evenly.
  7. Sprinkle the reserved crumble mixture over the blueberry filling.
  8. Bake for 30-35 minutes until golden brown and bubbling.
  9. Cool in the pan on a wire rack, then lift out using the parchment paper and cut into squares.

Notes

For a deeper flavor, toast the oats lightly before adding. Store bars in an airtight container for up to 3 days at room temperature or refrigerate for a week.
