  • 4 large eggs
  • 1/2 cup maple syrup or honey
  • 1 cup rolled oats
  • 2 cups fresh or frozen blueberries
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9 inch baking dish.
  2. In a mixing bowl, combine the cottage cheese, eggs, maple syrup, and vanilla extract. Whisk until smooth and creamy.
  3. Add the oats and baking powder, stirring until well incorporated.
  4. Gently fold in the blueberries.
