A delightful fusion of flavors featuring garlic and ginger, vibrant vegetables, and a creamy, spicy Bang Bang sauce, perfect for any occasion.

Ingredients

  • 3 cups cooked rice (day-old preferred)
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 1 cup protein (chicken, shrimp, or tofu)
  • 2 tablespoons vegetable oil
  • 3 tablespoons Bang Bang sauce (mayonnaise, sweet chili sauce, sriracha)
  • 2 green onions, chopped
  • Sesame seeds, for garnish

Instructions

  1. Spread freshly cooked rice on a baking sheet to cool for about 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chosen protein and cook for 5–7 minutes until done.
  4. Toss in mixed vegetables and stir-fry for another 3–4 minutes.
  5. Add the cooled rice, breaking up any clumps, and mix.
  6. Drizzle Bang Bang sauce over the rice, mixing thoroughly.
  7. Remove from heat, garnish with green onions and sesame seeds, and serve hot.

Notes

For a spicier version, increase the sriracha in the sauce. This dish is great for meal prep and can be frozen for 3 months.
