Banana pudding is a classic dessert featuring layers of creamy vanilla pudding, fluffy meringue, and soft banana slices, all embraced by crunchy vanilla wafers.

  • ⅛ tsp kosher salt
  • 4 tbsp sugar
  • ¼ tsp vanilla extract
  • 1 (6 oz) box instant vanilla pudding
  • 2¾ cups milk
  • 1 (7¼ oz) box vanilla wafers
  • 4 medium bananas (sliced)

Instructions

  1. Beat the egg whites and kosher salt together until frothy.
  2. Gradually add the sugar, one tablespoon at a time, while continuing to beat until stiff peaks form. Mix in the vanilla extract.
  3. Combine the milk and instant vanilla pudding in another bowl, whisking until softened and set.
  4. Layer the vanilla wafers, sliced bananas, and pudding mixture repeatedly in a large serving dish until all ingredients are used.
  5. Finish with a layer of pudding, then spread the meringue on top evenly.
  6. Bake in a preheated oven at 350°F until the meringue is lightly browned, about 10-12 minutes.

Notes

For added texture, consider toasting the vanilla wafers before layering. Store covered in the refrigerator for up to 3 days.
