A Mediterranean-inspired dish featuring baked feta cheese, juicy tomatoes, and fresh spinach, perfect for any meal.

Ingredients

  • Feta Cheese (8 oz)
  • Cherry Tomatoes (2 cups)
  • Fresh Spinach (2 cups)
  • Eggs (4 large)
  • Olive Oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Salt and Pepper (to taste)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium-sized baking dish, drizzle 2 tablespoons of olive oil. Spread the cherry tomatoes evenly and add the spinach on top.
  3. Crumble the feta cheese over the tomatoes and spinach.
  4. Sprinkle the minced garlic over the mixture followed by salt and pepper to taste.
  5. Bake for approximately 20 minutes until the feta has softened and the tomatoes are bubbly.
  6. Carefully crack the eggs over the mixture and return to the oven for another 5–7 minutes, until the eggs are set to your liking.
  7. Serve immediately and enjoy!

This dish can be prepped ahead of time by preparing the vegetable and cheese base a day in advance.
