  • 4 large eggs
  • ½ cup spinach, chopped
  • ½ cup cheddar cheese, shredded
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8-inch square baking dish with olive oil or cooking spray.
  3. In a mixing bowl, combine cottage cheese, eggs, spinach, and half of the cheddar cheese. Season with salt and pepper.
  4. Pour the mixture into the greased baking dish and spread evenly.
  5. Top with the remaining cheddar cheese.
