Cozy and tender cookies packed with warm spices, fresh apples, and topped with a sweet maple icing.

  • 2/3 cup unsweetened applesauce (reduced)
  • 2 cups old-fashioned whole rolled oats
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light or dark brown sugar
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 3/4 cup finely diced apples
  • 1/2 cup chopped walnuts (optional)
  • 2 tablespoons unsalted butter (for icing)
  • 1/3 cup pure maple syrup
  • 1 cup sifted confectioners’ sugar
  • Pinch of salt (for icing)

Instructions

  1. Reduce the applesauce by simmering it in a small saucepan over medium heat until reduced by half, about 10 minutes.
  2. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  3. Mix the dry ingredients in a bowl, combining the oats, flour, baking soda, salt, and spices, whisking to combine.
  4. Cream the butter and sugars until light and fluffy, about 2 to 3 minutes.
  5. Add the cooled reduced applesauce, egg yolk, and vanilla extract to the creamed mixture and mix until smooth.
  6. Combine the wet and dry mixtures until just combined.
  7. Fold in the diced apples and walnuts, if using.
  8. Portion the dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 14 to 16 minutes until edges are lightly browned.
  10. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
  11. Melt the butter and maple syrup for the icing, then whisk in the confectioners’ sugar and a pinch of salt until smooth.
  12. Drizzle the icing over the cooled cookies and let it set before serving.

Notes

Chill the dough for 10-15 minutes if it’s too soft. Store baked cookies in an airtight container for up to 3 days.
