Delightful meringue cookies infused with vibrant raspberry flavor, perfect for holiday gatherings.

Ingredients

  • 3 large Egg Whites, at room temperature
  • ¾ cup Granulated Sugar
  • ½ cup Raspberry Puree (fresh or frozen)
  • 1 teaspoon Vanilla Extract
  • Pinch of Salt

Instructions

  1. Preheat your oven to 200°F (95°C).
  2. In a clean mixing bowl, add the egg whites and pinch of salt. Beat with an electric mixer on medium speed until foamy.
  3. Gradually add sugar, one tablespoon at a time, while continuing to beat. Once all sugar is incorporated, increase speed to high and beat until stiff peaks form.
  4. Gently fold in the raspberry puree and vanilla extract.
  5. Transfer the mixture to a piping bag or ziplock bag. Pipe small mounds on a lined baking sheet, leaving space between.
  6. Bake for approximately 1 hour; turn off the oven and leave them inside for an additional hour.
  7. Cool on the baking sheet for 10 minutes before transferring to a wire rack.

Notes

Store meringues in an airtight container at room temperature to maintain crunchiness.
