  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.
  3. Add the eggs one at a time, mixing until fully incorporated, then add the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt and then fold this dry mixture into the wet ingredients until just combined.
  5. Gently fold in the rolled oats, chocolate chips, and chopped pecans.
  6. Drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them about two inches apart.
  7. Bake for 10-12 minutes until edges are golden but centers are soft.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies can be adapted with different nuts or chocolate types. Store in an airtight container for up to a week.
