A family favorite casserole that brings the flavors of sushi right to your dining table. This dish layers flaky salmon, creamy avocado, and spicy mayo over sushi rice for a comforting meal.

  • 2 cups sushi rice
  • 2 cups water
  • 1 pound fresh salmon
  • 1/4 cup mayonnaise
  • 12 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 avocado
  • 1 green onion, finely chopped
  • Nori sheets for serving

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rinse sushi rice under cold water until the water runs clear, then add 2 cups of water and cook according to package instructions (about 15-20 minutes).
  3. Meanwhile, cut salmon into small pieces and mix with mayonnaise, sriracha, and soy sauce until well combined.
  4. Fluff the cooked rice and spread it evenly in a greased baking dish.
  5. Layer the spicy salmon mixture over the rice evenly.
  6. Bake for 20-25 minutes until bubbly and golden.
  7. Remove from oven, top with sliced avocado and green onions, and allow to cool slightly before serving.
