Ingredients

  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 pre-made pie pastry or cookie dough

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your muffin tin.
  2. Roll out your pie pastry or cookie dough, cut into circles, and place them in the muffin tin.
  3. In a mixing bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, vanilla extract, and salt until well combined.
  4. Gently fold in the chopped pecans.
  5. Spoon the pecan filling into each pastry-lined muffin cup, filling them about three-quarters full.
  6. Bake for 18-20 minutes, or until the filling is set and edges are golden brown.
  7. Cool in the tin for about 10 minutes before transferring to a cooling rack.

Notes
