Delicious and easy breakfast burritos filled with savory sausage, fluffy scrambled eggs, and cheese, wrapped in warm tortillas.

Ingredients

  • 6 large eggs
  • 1 pound breakfast sausage
  • 4 large flour tortillas
  • ½ cup shredded cheese
  • Salt and pepper to taste

Instructions

  1. In a large frying pan over medium heat, cook the breakfast sausage for 5-7 minutes, breaking it into crumbles until golden brown.
  2. Whisk the eggs in a mixing bowl with salt and pepper. Pour over cooked sausage and stir gently, cooking for 3-4 minutes until fluffy.
  3. Warm tortillas in another pan over low heat for 30 seconds on each side.
  4. Lay a warm tortilla flat and spoon a portion of the sausage and egg mixture in the center. Sprinkle cheese on top.
  5. Fold in the sides and roll tightly from the bottom to encase the filling.
  6. If desired, crisp the burritos in the frying pan for a minute or two until golden brown.
  7. Serve with salsa or avocado on the side.

Notes

Customizable with various fillings; can also be made with turkey or plant-based sausage.
