Delightful no-bake sugar cookie bars with a soft, chewy texture and rich vanilla flavor, perfect for the holiday season.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour (or gluten-free blend)
  • ½ teaspoon salt
  • 1 cup powdered sugar
  • 12 tablespoons milk
  • Sprinkles or holiday candies for decoration

Instructions

  1. Prepare the pan by lining an 8×8 inch square pan with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until fluffy.
  3. Mix in the vanilla extract, then gradually add the flour and salt, combining until well-blended.
  4. Pour the dough into the prepared pan and press it evenly into the bottom.
  5. In a separate bowl, whisk together the powdered sugar and milk until smooth.
  6. Spread the icing over the cooled cookie base.
  7. Chill in the refrigerator for at least 2 hours to set.
  8. Remove from the pan, decorate with sprinkles, cut into bars, and serve.

Notes

Store leftover bars in an airtight container in the fridge for up to a week. They can also be frozen for later enjoyment.
