Deliciously chewy cinnamon sugar cookies that are quick to make and perfect for any occasion.

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • ¼ cup granulated sugar mixed with 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, salt, and ground cinnamon.
  3. Cream the softened butter with granulated sugar and brown sugar until light and fluffy.
  4. Mix in the large egg until thoroughly combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Using a tablespoon or cookie scoop, form small balls of dough and roll each in the cinnamon-sugar mixture.
  7. Place them on a baking sheet, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are slightly golden.
