Quick Blueberry French Toast Casserole

A comforting casserole combining eggs, bread, and blueberries, perfect for breakfast or brunch.

Ingredients

  • 1 loaf of French bread (stale or fresh)
  • 2 cups of milk
  • 4 large eggs
  • 1 cup of fresh blueberries (or frozen)
  • 1/4 cup of maple syrup (plus more for drizzling)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cut the French bread into 1-inch cubes. If fresh, let sit out for about 15 minutes to dry slightly.
  3. In a large bowl, whisk together milk, eggs, maple syrup, vanilla extract, and cinnamon until combined.
  4. Place the bread cubes into a greased baking dish, then pour the egg mixture over the bread and gently stir to coat.
  5. Fold in the blueberries evenly.
  6. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes until golden brown.

Notes

Best enjoyed warm. Can be prepared the night before and baked in the morning.
