A comforting weeknight dish featuring tender chicken thighs and caramelized onions in a rich onion soup gravy.

Ingredients

  • 46 Chicken Thighs (skin-on)
  • 3 large Onions, thinly sliced
  • 4 cloves Garlic, minced
  • 2 cups Beef Broth (or low-sodium broth)
  • 1 tablespoon Thyme (dried or 2 tablespoons fresh)
  • 2 tablespoons Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat; add sliced onions and cook until golden brown, about 15 minutes.
  3. Add minced garlic and cook for another 2-3 minutes until fragrant.
  4. In a large baking dish, place chicken thighs and pour the sautéed onions and garlic over them.
  5. Pour beef broth over the chicken and onions, then sprinkle thyme on top.
  6. Cover the dish with aluminum foil and bake for about 40 minutes. Remove foil and bake for an additional 15-20 minutes until chicken is cooked through.
  7. Let sit for a few minutes before serving.

Notes

Serve with crusty bread or a fresh salad for a complete meal. Customize by using different proteins or vegetables.
