A comforting one-pot meal featuring rigatoni pasta coated in a creamy sauce with savory sausage, garlic, and tomatoes.

  • 1 lb Italian sausage (sweet or spicy)
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot or deep skillet over medium heat, cook the sausage, breaking it into small pieces until browned, about 5-7 minutes.
  2. Add the diced onion and sauté for 2-3 minutes until softened, then stir in the minced garlic and cook for an additional 1-2 minutes.
  3. Pour in the diced tomatoes with juices, chicken broth, and heavy cream, stirring to combine.
  4. Add the rigatoni, ensuring it’s submerged, boil, then reduce heat to low. Cover and simmer for 15-20 minutes, stirring occasionally.
  5. Once the pasta is cooked, remove from heat and stir in the grated Parmesan cheese until melted.
  6. Season with salt and pepper to taste and serve warm.
