A comforting pasta dinner with tender chicken, creamy garlic sauce, and rich melted mozzarella combining for a deliciously comforting dish.

  • 2 large boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 12 oz bowtie (farfalle) pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside, reserving 1/2 cup of the pasta water.
  2. Season the chicken with 1/2 teaspoon salt, 1/4 teaspoon freshly ground black pepper, and 1 teaspoon Italian seasoning, tossing so each piece is coated.
  3. In a large skillet, heat 1 tablespoon olive oil over medium-high heat, then add the chicken and sear until golden and cooked through, about 6 to 7 minutes. Remove the chicken from the skillet and set aside.
  4. Reduce heat to medium-low, add 3 tablespoons unsalted butter, and melt. Add 4 cloves minced garlic and sauté until fragrant, about 30 to 60 seconds.
  5. Add 1/2 cup chicken broth and 1 cup heavy cream to the skillet and bring to a gentle simmer, stirring to combine.
  6. Stir in 1 cup shredded mozzarella cheese and 1/2 cup grated Parmesan cheese until the sauce is smooth and creamy.
  7. Return the cooked chicken to the skillet and add the cooked pasta, tossing to combine.
  8. Garnish with 2 tablespoons chopped fresh parsley and serve immediately while warm and gooey.

Notes

Cut the chicken into uniform pieces to ensure even cooking. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
