  • 1 pound kielbasa, sliced
  • 1 pound gnocchi
  • 1 bell pepper, diced (red or yellow)
  • 1 small onion, diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet over medium heat, warm the olive oil until shimmering.
  2. Add the sliced kielbasa to the skillet and cook for about 5-7 minutes until golden brown and crispy.
  3. Introduce the diced onion and bell pepper to the skillet and sauté for an additional 3-4 minutes.
  4. Add the minced garlic and cook for another minute until fragrant.
  5. Add the gnocchi to the skillet and pour in ½ cup of water, cooking for about 5 minutes until tender.
  6. Toss in fresh spinach and sprinkle with Italian seasoning, stirring until the spinach wilts.
  7. Taste and adjust with salt and pepper as needed, then serve warm.

Notes

This dish can be made ahead of time and stored for up to three days. Enjoy with a crisp salad or crusty bread.
