A creamy and cheesy Chicken Casserole that’s perfect for weeknight meals and brings comfort to the dinner table.

  • 2 cups cooked chicken (shredded or diced)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed veggies (carrots, peas, and corn)
  • 1 cup crushed crackers (like Ritz or saltines)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, cream of chicken soup, sour cream, and garlic powder. Stir until blended.
  3. Gently fold in the frozen mixed vegetables.
  4. Transfer the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  5. Sprinkle half of the shredded cheddar cheese over the mixture.
  6. Disperse the crushed crackers evenly over the top, followed by the remaining cheddar cheese.
  7. Bake for 30-40 minutes until the top is golden brown and the cheese is bubbly.

Notes

For an extra crunch, consider adding crushed crackers or breadcrumbs on top. It’s great for leftovers!
