  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a mixing bowl. Add granulated sugar, flour, and salt; mix until crumbly.
  3. Set aside about 1 cup of the mixture for topping. Press the remaining mixture into the bottom of a greased 8×8 baking dish.
  4. Bake for 15 minutes until lightly golden.
  5. Whisk together eggs, granulated sugar, lemon juice, lemon zest, and remaining flour until smooth.
  6. Pour the lemon filling over the crust. Sprinkle reserved topping on top.
  7. Bake for an additional 20 minutes, until filling is set and crumbs are golden brown.
  8. Cool at room temperature, then refrigerate for at least 2 hours before slicing.

Notes

Use fresh lemons for the best flavor. Store in an airtight container in the refrigerator for up to a week.
