A vibrant pasta salad that combines grilled corn, fresh vegetables, and zesty lime for a refreshing dish perfect for gatherings.

Ingredients

  • 12 ounces of pasta (rotini or penne)
  • 4 ears of fresh corn, grilled or roasted
  • 1 cup of cherry tomatoes, halved
  • ½ cup diced red onion
  • ½ cup crumbled feta cheese
  • 1 cup chopped fresh cilantro
  • Juice of 2 limes
  • 3 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add pasta and cook according to the package instructions until al dente. Drain and rinse with cold water.
  2. If using fresh corn, grill or roast the ears until charred (8-10 minutes), then cut the kernels off and set aside.
  3. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large mixing bowl, toss together the cooled pasta, grilled corn, halved cherry tomatoes, diced red onion, feta cheese, and chopped cilantro.
  5. Pour the lime dressing over the pasta mixture and gently stir to combine.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.

Notes

Serves well with grilled chicken, barbecued ribs, or fish tacos. Best enjoyed chilled.
