Hearty Stuffed Pepper Soup

A cozy, family-friendly bowl that brings all the flavors of classic stuffed peppers to your spoon with a thick savory tomato base and ground beef.

Ingredients

  • 1 lb ground beef
  • 3 bell peppers, diced
  • 1/2 cup yellow onion, finely chopped
  • 1 cup instant white rice
  • 24 oz marinara sauce
  • 1 can (14 oz) petite diced tomatoes, drained
  • 4 cups chicken broth
  • 2 tsp olive oil
  • 1 tsp chicken bouillon powder

Instructions

  1. Heat 2 tsp olive oil in a large pot over medium heat. Add 1/2 cup finely chopped yellow onion and cook until translucent, about 3 to 5 minutes.
  2. Add 1 lb ground beef to the pot and cook until browned, breaking it up as it cooks. Drain excess fat from the pot.
  3. Stir in 3 diced bell peppers, 24 oz marinara sauce, 1 can (14 oz) petite diced tomatoes, and 4 cups chicken broth.
  4. Bring the mixture to a simmer and add 1 tsp chicken bouillon powder.
  5. Stir in 1 cup instant white rice and cook according to package instructions, usually a few minutes.
  6. Taste and adjust seasoning as needed, then serve warm.

Notes

For a saucier version, add a little extra marinara sauce. Store leftovers in an airtight container for up to 4 days.
