Ingredients

  • 2 medium English cucumbers, sliced
  • 4 vine-ripened tomatoes, diced
  • 1 cup block feta cheese, crumbled
  • 1 small red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano

Instructions

  1. Slice the cucumbers in half lengthwise and cut into half-moons. Dice the tomatoes into bite-sized pieces.
  2. Thinly slice the red onion and soak in cold water if a milder flavor is desired.
  3. Crumble the feta cheese into small and larger pieces for varied texture.
  4. In a large mixing bowl, combine the cucumbers, tomatoes, red onion, and feta. Gently toss together.
  5. Drizzle with olive oil and red wine vinegar, adding oregano, salt, and pepper. Toss gently to coat.
  6. Let sit for 10 minutes at room temperature for flavors to meld. Serve and enjoy!
