Deliciously sweet Gingerbread Truffles, filled with the flavors of ginger, cinnamon, and nutmeg, enrobed in rich chocolate for a melt-in-your-mouth experience.

Ingredients

  • 1 cup gingerbread cookie crumbs
  • 1/4 cup cream cheese (softened)
  • 2 tablespoons molasses
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 8 ounces melting chocolate (dark or white)

Instructions

  1. In a large bowl, combine gingerbread cookie crumbs, softened cream cheese, molasses, cinnamon, and ground ginger. Mix until it forms a dense, moldable dough.
  2. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
  3. Once chilled, take a tablespoon of the mixture and roll it into a ball.
  4. Melt chocolate in a microwave-safe bowl in 30-second increments until smooth.
  5. Dip each truffle into melted chocolate using a fork and place on a parchment-lined baking sheet.
  6. Optional: Sprinkle toppings while chocolate is still wet.
  7. Chill the truffles in the refrigerator for about 30 minutes to set the chocolate.

Notes

These truffles can be made ahead of time and stored in the fridge for up to two weeks. They also freeze well for up to a month.
