Warm, garlicky, and comforting, this Garlic Butter Chicken Pasta is a family favorite, featuring tender browned chicken in a silky sauce over al dente pasta.

  • 2 lbs boneless chicken, cut into bite-sized pieces
  • 1 lb fettuccine or linguine
  • 1 cup unsalted butter, room temperature
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley, chopped for garnish
  • Red pepper flakes (optional)

Instructions

  1. Gather all ingredients. Cut the chicken into bite-sized pieces and mince the garlic. Pat the chicken dry before cutting to help it brown better.
  2. Bring salted water to a boil in a large pot. Cook the pasta according to package instructions until al dente, then drain and set aside. Reserve 1/2 cup of pasta cooking water if needed.
  3. Melt 1/2 cup of butter in a large skillet over medium heat. Add the chicken, season with salt and pepper, and cook until golden brown and cooked through, about 7 to 10 minutes.
  4. Add the minced garlic to the skillet and sauté for 1 to 2 minutes until fragrant, stirring constantly to avoid burning.
  5. Pour in the chicken broth and heavy cream, and let it simmer for 5 minutes.
  6. Add the cooked pasta, remaining butter, Parmesan cheese, and Italian seasoning. Toss to combine, adding reserved pasta water or chicken broth to loosen the sauce as necessary.
  7. Taste and adjust seasoning with salt, pepper, and red pepper flakes if desired.
  8. Serve immediately, garnished with chopped fresh parsley.

Notes

Pat chicken dry and avoid overcrowding the skillet to get a nice golden crust. Reserve pasta water to adjust sauce consistency. Use freshly grated Parmesan for the best flavor.
