Delightful fruitcake cookies that embody traditional holiday flavors in a light and chewy form, perfect for festive gatherings.

  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mixed nuts, chopped
  • 1 cup dried fruit mix (raisins, cherries, apricots)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large mixing bowl, beat the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  4. Add the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined.
  6. Fold in the dried fruits and chopped nuts until evenly distributed.
  7. Drop tablespoon-sized portions of dough onto ungreased baking sheets, leaving space in between.
  8. Bake for 10-12 minutes until edges are slightly golden and centers are set.

Store cookies in an airtight container for up to a week. Consider using parchment paper on baking sheets to prevent sticking.
