A comforting one-dish casserole featuring tender chicken pieces roasted over creamy, savory rice that absorbs flavorful broth.

Ingredients

  • 2 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 cup water
  • 1 can (10.5 oz) cream of chicken soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried parsley
  • Chicken pieces (amount as desired)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly oil a large baking dish.
  2. Combine the rice, chicken broth, water, and cream of chicken soup in the baking dish. Sprinkle in the garlic powder, onion powder, black pepper, and dried parsley. Stir until mixed.
  3. Arrange the chicken pieces on top of the rice mixture, skin-side up if using skin-on pieces.
  4. Cover the dish tightly with aluminum foil and bake for about 90 minutes.
  5. Remove the foil and let the dish rest for 5 minutes. Fluff the rice gently with a fork and serve.

Notes

For crisper chicken skin, uncover for the last 10 minutes of baking. Store leftovers in an airtight container for up to 4 days.
