Fluffy Japanese soufflé pancakes are a delightful breakfast treat, offering a light and airy texture that melts in your mouth.

Ingredients

  • 2 large eggs
  • 1 tablespoon of sugar
  • 1/4 teaspoon of vanilla extract
  • 1/4 cup of milk
  • 1/4 cup of all-purpose flour
  • 1/2 teaspoon of baking powder
  • Butter or oil for the skillet

Instructions

  1. Separate the egg whites from the yolks in two different bowls.
  2. Whisk together the milk, vanilla, sugar, and baking powder in the egg yolk bowl until smooth.
  3. Gradually add the flour, mixing until just incorporated.
  4. Beat the egg whites until stiff peaks form, about 3-5 minutes.
  5. Gently fold the egg whites into the yolk mixture with a spatula.
  6. Preheat a nonstick skillet over low heat and add some butter or oil.
  7. Pour the batter into the skillet to form thick rounds, cover and steam for about 4-5 minutes.
  8. Flip and cook for an additional 3-4 minutes until both sides are golden.

Notes

For best results, beat the egg whites until stiff peaks form and avoid deflating them when folding into the yolk mixture.
